Love salmon cakes, easy to whip up too.

1 can salmon, or 4 oz of cooked salmon, mix in bowl with one egg, add pepper, salt, lemon pepper, paparika, lots of dill, celery seed and some crunch up crackers or 1/4 cup of cornmeal along with 1/4 to 1/2 flour and a splash of milk.  Mix in bowl then using big table spoon, drop nuggets size of mix into hot oil (325 degree).  Drain on paper towel and try a little malt vinegar sprinkled on them.  Yum!

All this dinner needs is veggies and mashed potatoes!

Salmon cakes are awesome! I usually make them into patties and fry in a skillet, or put them in the oven to bake when I make for my daddy, who has crappy cholesterol. So yummy!

Vegetable beef soup. We love it. I put a can of diced tomatoes, corn, green beans and a package of cooked pinto beans, and 1 pound of stew meat cut up,  6 potatoes baked in the microwave cooled and peeled and cut in small pieces.; all this goes in our big crock pot at around 10 a.m. and is yummy by 5:30 when we usually have dinner. I sometimes add green peppers and carrots , depending upon what I think we will like best that day. It is simple and only takes about 20 minutes or so. sometimes I make cornbread to go with it, but usually we have crackers.http://aspiretoinspire.hubpages.com/question/176032/what-is-your-favourite-weekday-dinner-recipe#

For ease, price and taste, I often make a Garbage Salad.  I should write a hub on it.  You use a dinner plate to hold chopped fresh greens, such as romaine, spinach, leaf lettuce, etc.  Next, you gather the following ingredients:  black beans, imitation (or real) crab, chopped fresh tomato, chopped hard boiled egg, grated cheese (any kind) and avocado (optional).  Place a generous scoop of each around the outer edge of the plate, each ingredient touching each other, and be sure to color coordinate for eye appeal.  There should be only a small amount of greens showing in the middle.  It always tastes best when using two different salad dressings combined together (your choice). We last used a ceasar vinaigreette with a creamy french dressing.  Actually, you can vary the ingredients any way that you like, as long as all the ingredients taste good together and have eye appeal.  Just toss it all together, pour the dressings on and enjoy. It's a great, quick meal that is light and refreshing during the summer months.  It tastes great with some crusty French bread on the side!
